You can always tell freeze-dried foods from those that have been dehydrated because the former really do retain the same size, shape, and color as the fresh version. Dehydrated foods shrink a great deal once the water has been removed, and they lose a bit of color as well.     Vegan here….been catch’n trouble all my life…that is when I tell someone…I usually does share my eating preferences. I just eat selective items on the menus when I go out and then eat “the rest of the meal” when I am home. I love your quick meal ideas and freeze drying…if you come across vegan meals besides beans & Rice. It would be most appreciated…kindest Regards,SelinaO
