Quinoa With Peas and Carrots

Did you know that you can make a big batch of quinoa in an electric rice cooker? My daughter and I do that every so often and then divide the cooked quinoa into smaller amounts and freeze them in Zip-loc bags. Warm quinoa with almond milk, a little vanilla, and sweetener (I use stevia) is a filling and warm breakfast. Here, however, quinoa makes a tasty salad or side dish! Add a cup of freeze dried, or fresh, chicken for a main dish.
